One of our favorite summer desserts to make in the oven is definitely crisps and cobblers. They can be prepared with a variety of fruits. In spring, we enjoy strawberry and cherry crisps, while in summer we prefer using peaches and blueberries for this delightful treat. The preparation is simple: everything is mixed together and then topped with a crumble mixture, which bakes beautifully to create little islands of crispiness infused with the flavors of toasted cinnamon, nutmeg, and brown sugar. Our favorite way to serve it is warm, with a generous scoop of our favorite vanilla ice cream. It’s truly perfect—I hope you’ll love it too!

Essential ingredients
In this recipe, we use simple ingredients that can be found in any Lidl store. Below, we’ll share a bit more about the ingredients and possible substitutions. As always, the full recipe is waiting for you at the very end of the post.
Fruit – The filling is made from a combination of fresh peaches and blueberries. You can also use frozen blueberries, or fresh ones if they’re in season. Alternatively, you can replace the blueberries with the same amount of peaches.
Crumble topping – Adds crispiness and a golden-baked exterior. It pairs wonderfully with the fruit. It contains rolled oats, flour, cold butter, and sugar.
Ice cream – The cherry on top is the ice cream. It creates a beautiful contrast between the hot fruit and the cold ice cream, while also adding creaminess and flavor. We prefer to add a scoop of quality vanilla ice cream with a delicate flavor.
Storing
It's best to eat the peach and blueberry crisp on the same day. We like it best served warm, with a scoop of cold vanilla ice cream. If you have any leftovers, you can store them covered in the fridge until the next day.

In a large bowl, combine the peach wedges, sugar, cornstarch, vanilla, cinnamon, and nutmeg. Stir until the ingredients are well combined, then gently fold in the blueberries. Pour the mixture into a deep, medium-sized baking dish. Place the oven rack in the center and preheat the oven to 190°C (375°F).

In a separate bowl, combine the rolled oats, flour, cold butter cut into cubes, brown sugar, and vanilla. Rub the mixture between your hands until it forms a uniform, crumbly texture.
Peach Blueberry Crisp
Spread the crumble evenly over the fruit in the baking dish, then place the dessert in the oven and bake for 40–45 minutes at 190 °C (375 °F). When the crumble is golden brown, remove it from the oven and let it rest for 10 minutes. Then divide it among six plates and serve with a generous scoop of vanilla ice cream.
